Tortas ahogadas, representative dish of Jalisco

The torta ahogada (or drowned sandwich) is one of the main specialties of the state of Jalisco, where the city of Guadalajara and Tequila are located. This particular dish has become so popular around Mexico that it can be found almost everywhere.

Tortas ahogadas are made with a type of bread called “birote”, which is more dense and crunchy than the regular baguette. Its consistency allows it to absorb liquids less, which is why the bread can be submerged in several salsas (or sauces) without losing its shape.

This bread is then filled with sliced, chopped or shredded pork in style of mexican carnitas, then it’s submerged in the special salsa made of chile de arbol and it can be seasoned with a touch of vinegar, cumin and garlic. After this you can add as much tomato sauce and sliced onion (previously marinated in lemon juice) as you like.

This dish has proved so popular that you can find in other states and cities of Mexico. In many of these places the recipe has been modified according to the cuisine of each region, but the best tortas ahogadas can only be found in Jalisco.

 

Tortas ahogadas, platillo representativo de tierras tapatías

La torta ahogada es uno de los platillos más típicos y representativos del estado de Jalisco, lugar donde se encuentra la ciudad de Guadalajara y Tequila. El platillo se ha hecho tan popular que se puede encontrar en diferentes regiones del país.

Las tortas ahogadas se elaboran con un pan llamado “birote”, que es mucho más denso y crujiente que el pan baguette. Además permite que pasen menos los líquidos, por lo que se puede sumergir en distintas salsas sin perder su forma.

Este pan se rellena de carnitas de cerdo estilo Jalisco ya sea en cubos, trozos o rebanadas, luego se sumerge en salsa picante de chile de árbol y se le da un toque especial sazonando con condimentos clásicos como vinagre, comino y ajo. Posteriormente se agrega la salsa de jitomate y rebanadas de cebolla desflemada (cebolla sumergida en limón) al gusto de cada persona.

Este platillo ha resultado tan popular que lo puedes encontrar en otros estados y ciudades de México. En muchos de estos lugares la receta se ha modificado según la gastronomía de cada región pero las mejores tortas ahogadas las encontrarás solamente en tierras tapatías.
